4 Cornish Game hens
1 teaspoon oregano
1 ½ teaspoons salt
¼ teaspoon pepper
1 box cornbread stuffing mix ( I use Stove Top)
1- 8 ounce can cream corn
1- 4 ounce can chopped green chilis
2 tablespoons butter
2 tablespoons vegetable oil
½ pound yellow squash, sliced
½ pound zucchini, sliced

Directions:

1. Rub hens inside and out with oregano, salt, and pepper

2. Prepare cornbread mix, according to directions, adding cream corn and green chilis (Adjust water to get the consistency you want.I like mine a bit loose)

3. Brown hens, two at a time, slowly on all sides in butter and oil in a large skillet

4. Stuff hens with dressing

4. Mix squashes together

5. On 4 large pieces of heavy duty foil, divide squash slices

6. Place a hen on the center of squash. Wrap tightly

7. Bake on cookie sheet for 1 hour at 350º

Notes:
You can prepare any number of hens. I usually prepare 2 and put the leftover dressing in a foil pack and heat up for the last 20 minutes.
If you are a lighter eater, cut the hens in half and place a half on each piece of foil.

You can also change up the ingredients and create some new flavors. The hens are always delicious.
