6 slices bacon chopped
1/4 cup chopped onion
1 stalk celery chopped
2 cloves garlic minced
Salt and pepper
3 cups chicken broth
1 head cauliflower cut into florets
3/4 cup sour cream
1 1/4 cups shredded Monterey Jack or Sharp Cheddar

garnish:
1 green onion chopped
1/4 cup Sharp Cheddar or Monterey Jack

Directions:
Directions:
sautée bacon in pot
remove then add a little olive oil if needed and sautée celery onion and garlic
add one head cauliflower florets
add 3 cups chicken broth

pressure cook high 5 minutes
let sit 10 minutes to naturally release steam
after 10 minutes move valve

if you have a submersion blender, blend the soup in the pot. If you don't have one, blend it in your blender

add a little soup to your sour cream before you add it to the soup. This will prevent it from curdling.
add bacon and cheese

if the soup is too thick, thin with a little milk
