3 Tablespoons Butter
1 tablespoon Olive Oil
3/4 cup diced onion
1/2 cup diced celery
2 garlic cloves minced
1/4 cup flour
2 cups half and half
14 oz. chicken broth
1 tablespoon fresh thyme ( I used dry)
1 cup carrots shredded
1 cup fresh spinach, chopped
1 to 1 1/2 cups diced cooked chicken. ( I used rotisserie chicken)
16 oz potato gnocchi, ( I cut them in half so they aren't such a big chunk)
salt and pepper

Directions:
Directions:
In a large pot over medium heat melt butter and olive oil. Add onion, celery, and garlic. Heat until tender. Mix in flour to create a roux and cook for another minute.
Add chicken broth. Gradually stir in half and half and bring it to a boil. Reduce the heat to medium-low and simmer for 10 minutes.
Add thyme, carrots, spinach, chicken, and gnocchi. Simmer for another 5 minutes or until gnocchi is tender and soup has thickened. Add salt and pepper if desired.
