1 1/2 pound skinless, boneless chicken breasts (or thighs), cut into 1 inch pieces
1 Tbsp olive oil
8 ounce Great Northern white beans
1 32 ounce carton of reduced sodium chicken broth.
1 large onion, cut into thin wedges
2 fennel bulbs, cut into thin wedges
1/2 cup beer
4 cloves garlic, minced
1 1/2 tsp fennel seeds, crushed
8 ounces smoked sausage, cut into 1 inch pieces

Directions:

Start by soaking the white beans overnight. Drain and pick clean right before you start.
In a large skillet, cook chicken in hot oil, over medium heat, until browned.
Drain the fat.
Put the chicken in a six quart slow cooker.
Stir in every thing (including beans), but not the sausage.
Cover and cook on low for 6.5 hours.
Cook the sausage coins in a skillet on the stove.
Drain the sausage of fat.
Add the sausage to the slow cooker, cook for another 20 minutes on low.
Season to taste with salt and pepper.

This is one of mom’s own recipes. She got a slow cooker for Christmas and this recipe was in the included recipe book. She doctored it up and added some Ambassador Sausage that was in the fridge. I tried to write down what she did to this stew - it was her own creation and delicious!
