6 slices of prosciutto
40 Brussels sprouts, washed trimmed and cut into halves
2 tbsp olive oil
1/2 tsp salt
Pinch of pepper
¼ cup Parmesan cheese, finely grated

Directions:
Directions:
Wash and trim the Brussels sprouts. Cut each in half and set aside till ready to cook..
In a large heavy frying pan over medium high heat, cook the prosciutto slices about 2 minutes on each side. Remove, from pan, cut into small pieces, and set aside.
In the same pan, heat the olive oil; then add the Brussels sprouts. Start with the cut side down for the first few minutes to crisp the flat sides. Then stir constantly till the sprouts are tender crisp. They should still be crunchy on the inside. Cook for a total of about 8 minutes adding the prosciutto for the last couple of minutes. Season with salt and pepper if desired.
Transfer to serving dish and sprinkle with Parmesan cheese.
Serve immediately.

Note: If serving more people, allow about 8 to 10 sprouts per person and adjust recipe accordingly.
