8 oz. cheddar cheese, shredded
1/4 cup butter
1/4 cup flour
5 medium potatoes, sliced fine
2 small onions, sliced fine (or diced)
2 cups milk
1 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
Preheat oven to 350°F.
Melt butter; blend in flour; add milk all at once; cook, stirring constantly until slightly thickened. Add cheese. Season and continue to cook until cheese melts.
Remove from heat; spread half the cheese sauce on bottom of shallow 2 1/2 quart baking dish.
Arrange potatoes and onion slices over sauce in dish.
Spread remaining cheese sauce over top.
Bake until tender, about 1 1/2 hour.
