BRUSCHETTA

8 Chopped roma tomatoes (also called plum)
1/3 C. chopped fresh basil
3/4 C. shredded parmesan cheese
1-2 cloves fresh garlic
1/8 C. garlic olive oil (or use tiny amount of minced garlic from a jar)
1 T. balsamic vinegar
1 tsp olive oil
1 large French bread loaf, cut at an angle,into approx.1 in. think slices.(about 20 ovals)
s/p to taste

Directions:
Rub fresh garlic on bread slices
Top with garlic olive oil or minced garlic
Toast bread until slightly browned

Combine all other ingredients

After toast has cooled place tomato mixture on top of each slice,using a slotted spoon to remove liquid portion

Can make tomato mixture ahead of time,even day before. Keep refrigerated.
