Spaetzle:
6 whole eggs
4 egg yolks
6 cups flour
2 cups milk
1 teaspoon salt
3 tablespoons melted butter for dough batter
6 oz butter, to saute
1 Tbsp olive oil

Kaesespaetzle:
4 oz. butter
1 teaspoon garlic
2 cups heavy cream
2 cups mozzarella
2 cups swiss cheese
1 cup parmesan cheese

Make Spaetzle:
Bring one gallon of salted water and 1 tablespoon of olive oil to boil. mix first 5 ingredients together. Press the dough through a colander into the boiling water (or use spaetzle maker).
Boil the spaetzle for 3 minutes until spaetzle float on top and water starts foaming.
Using a hand strainer, scoop spaetzle into a colander and let the spaetzle dry.

Make Kaesespaetzle:
Butter a 10 by 12 inch deep baking dish. Heat 4 oz. of butter in a hot skillet. Saute garlic for 2 minutes. Add heavy cream and season with salt and pepper, let reduce and set aside.
In a bowl mix the reduced cream and spaetzle. Fill baking dish with 3 layers of spaetzle with Swiss cheese first, then mozzarella, top with parmesan.
Bake in a hot oven and set aside for 15 minutes in a warm place.
