Rhubarb Pie Recipe

2 C rhubarb

1 C sugar
4 rounded tsp flour
3 egg yolks
½ C sour cream

3 egg whites, beaten
½ t vanilla
6 T sugar, added gradually

Directions:
Directions:
Pour boiling water over rhubarb and drain.

Combine: sugar, flour, egg yolks and sour cream.

Mix all together and pour into unbaked pie shell. Bake 1 hr in 350º oven.

Top with meringue and then bake 8 mins in a 400º oven.

When growing up in Illinois, rhubarb grew abundantly.
