4 eggs
1- 2/3 cups of granulated sugar
1 cup vegetable oil
1 - 15 ounce pumpkin
2 cups sifted all purpose flour
2 teaspoons of baking powder
1 teaspoon salt
2 teaspoons of ground cinnamon
1 teaspoon baking soda

Icing
8 ounce cream cheese
1/2 cup softened butter
2 cups confectioner's sugar
1 teaspoon vanilla extract

Directions:
Directions:
Preheat oven to 350º.
Cake
Combine eggs, sugar, oil, and pumpkin.
Mix ingredients until light and fluffy.
Stir together flour, baking powder,cinnamon, salt, and baking soda.
Add dry ingredients to pumpkin mixture.
Beat on low until smootn.
Spread into greased 10" X 13" baking pan.
Bake for 30 - 40 minutes until cake is done in the middle.

Icing
Combine cream cheese and butter. Beat until smooth.
Add sugar and mix on a low speed.
Stir in vanilla extract and mix again.

Spread on cooled cake.

I got this recipe from a fellow Alabama Farmers Federation Women's Leadership State Board member, Debbie Dunn. She got the recipe from her cousin, Sandy North. Debbie brought this to a Lee County Alabama Farmers Federation Women's Leadership Committee meeting where the members wrote post cards for Tom Whatley's victorious Alabama State Senate campaign. Tom felt that these post cards were a positive influence in his campaign.
