Buffalo Wing Chili Recipe

EVOO Extra Virgin Olive Oil
2-3 lbs ground chicken
2 carrots, peeled and finely chopped
1 large onion, chopped
2 stalks of celery, finely chopped
5 garlic cloves, chopped
1 T. Chipolte chili powder (don't substitute!)
1 t Smoked Paprika
1 bay leaf
salt and pepper
1 box chicken stock
¼ c. Texas Pete (optional)
1 lg. can Hunts tomato sauce
1 lg. can Hunts crushed tomatoes
1 lg. can Hunts diced tomatoes
2-3 cans White Beans (white kidney and navy is what I use)
handful of chopped flat leaf parsley


Buffet of Toppings and Sides:
Carrots
Celery
Sour Cream
chopped onion
shredded cheese
Blue Tortilla chips
parsley

Directions:
Directions:
Cook chicken in EVOO then place in large stockpot with 1/2 of the box of chicken stock on low heat. Saute carrot, onion, celery and garlic in pan, and then add to stock pot. Add chipotle chili power, bayleaf and a little salt and pepper. Cook, stirring frequently for about 5 minutes on medium heat. Add all remaining ingredients and bring to a simmer. Let cook about 10 minutes after reaching simmer. Remove bay leaf and serve hot with buffet style toppings to let your guests choose from!

This is a crowd pleaser and the pot is always empty. This is my own version after trying many other recipes and adjusting them to perfection. I also won 1st place in a chili cook off with this recipe!
