3 lb medium red potatoes
1 jar roasted red peppers, 1 T. reserved liquid
6 oz soft goat cheese
1/3 c. olive oil
2 tsp salt
1 tsp pepper
1/2 c. thinly sliced scallion greens
1/3 c. sun-dried tomatoes, drained and chopped
1/3 c. chopped basil

Directions:
Directions:
1. Steam potatoes until tender, 20-25 minutes. Drain and cool.
2. Peel potatoes, halve them lengthwise and slice 1/3'' thick
3. In a large bowl, combine goat cheese, oil, red pepper liquid, salt, and pepper.
4. Add potatoes, red peppers, scallions greens, sun-dried tomatoes and basil.
5. Serve at room temperatue
6. Enjoy!
