2 chicken breasts or cutlets if the cutlets are long and wide enough to wrap
4 slices of prosciutto
1 large ball of fresh mozzerella
½ can seasoned diced tomatoes
dried oregano or Italian seasoning
1/3 cup fine dry breadcrumbs-seasoned
2 T grated parmesan cheese
3 T butter, melted

If using chicken breasts, pound chicken (between two pieces of plastic wrap) and to 1/8 inch thick

Take each chicken breast and line with prosciutto. Top with tomato, mozzarella, and oregano down the middle leaving ¼ inch on edges. Fold in sides (if you can), and roll up

Dip chicken in butter to coat, then roll in breadcrumbs mixed with parmesan. Bake in a glass baking dish (seam side of chicken roll down) at 350 for 35-40 minutes (I tend to add the remaining tomatoes to the pan).

Remove from pan and stir mixture remaining in the pan til smooth (adding a pat of butter if needed), spoon over chicken.
