I got this recipe from a friend, I don’t go by measurements, I go by sight and how much you like. I tend to amp up the veggies as well!

1 package orzo pasta
½ each Red Pepper and Green Pepper, diced small
1 cucumber, diced small
1-2 diced tomatoes (seeds removed)
one small bunch (or ½ large bunch) scallions, sliced thin
chopped kalamata olives (about ¾ a cup or to taste)
One 4 oz square container of feta (Atheno’s works well)
1 small bottle of Greek dressing –we like Ken’s

Cook the orzo pasta, drain.

Let cool just a bit, then toss with all ingredients.

Great served still warm or room temp.
