Pudding

2 C finely chopped suet
3 eggs, well beaten
½ C white granulated sugar
½ C light brown sugar
2 T molasses with light corn syrup to make 1 cup
1 C milk
1 C seedless raisins
4½ C sifted flour
2 t baking powder
1 t baking soda
1 T grated nutmeg
1 T cinnamon

Rum Sauce

2 C brown sugar
4 T flour
4 T butter
½ t grated nutmeg
½ t vinegar
4 C water
Vanilla or rum to taste

Directions:
Directions:
Beat together eggs, suet and sugar. Add all other ingredients, stirring evenly until the mixture is stiff. Pour into an ungreased large metal mixing bowl and cover lightly with tinfoil, leaving space for raising. Steam in a pot with hot water for several hours until it tests clean. Serve with a sprig of holly and pour over ignited warm brandy for effect. Accompany with rum sauce To improve the mellow flavor and save time during the holiday season, I make mine 6 months before Christmas; freeze then thaw and steam for several more hours on Christmas Day.


Rum sauce
Mix all ingredients except vanilla or rum in a pan and boil slowly until thickened. Keep warm and add flavoring just before serving. Serve warm.
