Boneless skin-on chicken breasts (if you can’t find the skin-on breasts you can buy the skin on whole chicken leg/thigh things, and de-bone the breasts)
Olive Oil, Salt & Pepper

Get creative with stuffing the chicken!
Cheese for stuffing (goat, blue, feta, mozzarella)
Greens (spinach, basil)
Could also use meat like prosciutto

Directions:

Coat the chicken in olive oil and salt and pepper (liberally.)

Run your finger underneath the skin to create space, trying to keep the sides attached to hold in the stuffing – don’t remove the skin.

Stuff with thin slices of goat cheese (stuff with as much or as little as you like) and the basil.

Bake at 350 for 35 minutes or until the juices in the chicken run clear-I tend to broil it the last few minutes to crisp up the skin. Serve with a simple salad, lightly dressed!
