6 slices bacon
1/2 c. green onions, chopped
1 c. brown rice
1 can (16 oz or 2 c.) stewed tomatoes
1 c. hot water
1 tsp. curry powder
1/2 tsp. salt
1/4 tsp. each: red pepper sauce, cayenne pepper
1/2 c. red or green bell pepper, chopped
1/2 c. celery, chopped

Directions:
Directions:
Fry bacon until crisp. In 2 TB bacon fat cook onions, stir in rice. Place tomatoes, water, curry, salt, red pepper sauce and cayenne pepper in blender and pureé. Add to rice and pepper and celery. Cover and cook over low heat for 10 mins. Spoon into 1 1/2 quart dish. Cover and bake 350º for 40 mins. Stir few times. Cover quickly to prevent loosing moisture. Cover with bacon. Serve from dish.
