2 cups elbow macaroni
1 pound ground beef
1 (14 ounce) jar pizza sauce
1 (4 ounce) can tomato sauce
1 (4.5 ounce) can sliced mushrooms, drained
1 pound shredded mozzarella cheese
Optional:
¼ cup chopped onion
Pepperoni
2 cloves garlic - minced
Salt & Pepper

Directions:

1) Preheat oven to 350 degrees F (175 degrees C).
2) Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes. Drain.
3) Season ground beef with Salt & Pepper, cook and stir in a skillet over medium heat until meat is crumbly and browned, about 10 minutes; drain excess grease.
3A) *Optional* Saute onion & garlic in a little of the remaining grease from the ground beef.
4) Mix cooked ground beef, onions & garlic (if used), macaroni, pizza sauce, tomato sauce, and mushrooms in a bowl. Layer half the macaroni mixture into a 9x12-inch baking dish; top with 1/2 the mozzarella cheese. Layer remaining macaroni mixture over the top; sprinkle remaining mozzarella cheese over macaroni mixture. Place pepperoni slices on top of the cheese (Pizza style). Cover dish with aluminum foil.
5) Bake in the preheated oven until cheese has melted and casserole is bubbling, about 35 minutes.
6) Remove aluminum foil and switch oven to Broil. Broil for 3-5 minutes or until cheese has started to darken and pepperoni have started to crisp up. Let cool for 3 to 5 minutes before serving.

We used the Tex-Mex cheese blend from Costco, and it worked out really well.
We also used Rigatoni instead of Macaroni because thats the pasta the kids chose. I don't think it really makes any difference at all which one you choose.
