1 cup matzah cake meal
1 tsp. salt
1 tsp. cream of tartar
1 tsp. baking soda
½ cup brown sugar
½ cup Crisco
3 eggs separated
3 cups grated, raw carrots

Directions:
Directions:
Sift together the cake meal, salt, baking soda and cream of tartar. Cream together sugar and crisco. Beat egg yolks until light. Alternately, add egg yolks and dry ingredients to cream mixture and mix well. Stir in carrots. Fold in stiffly beaten egg whites.

Bake in well greased bundt pan at 350º for 40 minutes or until toothpick comes out dry.
