1-1/2 c. rotini pasta or pasta of your choice (3 c cooked)
2 chicken breasts cut to cube chunks
3 slices of bacon, cut in small pieces
1 onion, chopped
4 oz. mushrooms, sliced or 'chunked' (optional)
Shredded mozzarella cheese

Alfredo Sauce:
4.4 oz. melted butter (125 g)
2 tbsp. flour
2-3 garlic cloves, minced
7 oz. heavy cream (200 ml)
7 oz. whole milk (200 ml)
1/2 c. shredded parmesan
1/2 c. shredded cheddar
dash pepper

Directions:
Directions:
Cook pasta according to instructions. Drain & set aside.
Preheat oven to 350ºF. In a large pan, cook chopped bacon & onion until onion is softened. Add chicken chunks cook until chicken is browned slightly. Add mushrooms (if using) & pasta & mix together. Season with pepper. Add 3/4 of the sauce to the chicken mixture & mix thoroughly. Transfer to baking dish. Pour remaining sauce over & cover with the shredded mozarella cheese.
Bake for about 20 minutes, or until it bubbles & lightly browns. May be covered if it browns too quickly.

Sauce: Melt butter in saucepan over med-low heat. Add flour & whisk to combine. Cook for 1-2 minutes longer. Add minced garlic. Mix the cream & milk together when measuring in measuring cup & gradually add to butter mixture, stirring constantly. Cook 1-2 minutes more. Add the cheeses & stir until the cheeses have melted.
