6 Green Peppers
2 quarts boiling water
2 tsp salt
2 C cooked rive
1 lb ground beef - cooked
1 C drained tomatoes
1 Tbsp onion - chopped fine
2 tsp salt
1/4 tsp pepper
2 Tbsp bread crumbs
2 Tbsp melted butter
3/4 C tomato juice

Directions:
Directions:
Wash and dry peppers. remove stems and seeds and cook in boiling salted water 5 minutes. Combine Rice, meat, tomatoes, onion, salt and pepper. Stuff parboiled peppers. Mix crumbs and butter and sprinkle on top of peppers. Put tomato juice into a large casserole; place peppers in the casserole and bake uncovered in a preheated 375ºF oven about 30 minutes
