German Chocolate Cake Recipe

2 1/2 C flour
1 tsp baking Soda
3/4 tsp salt
1/2 C boiling water
4 0z German sweet chocolate, broken into pieces
1 C Butter
2 C sugarr
4 eggs, separated
1 1/2 tsp vanilla extract
1 C buttermilk

Coconut Pecan Frosting
3 egg yolks
1 C evaporated milk
1 C sugar
1/2 C butter
1 tsp vanilla extract
1 cup coconut - cut
1 cup chopped pecans

Directions:
Directions:
Mix and sift flour, soda and salt. Add water to chocolate, cool. Cream butter. Add sugar gradually and cream until fluffy. Add egg yolks one at a time beating well after each addition. Add extract and cooled chocolate mixture and mix well. Add sifted ingredients alternatively with buttermilk, mixing just enough after each addition to keep batter smooth. Fold in stifly beaten egg whites. Pour batter into 3 greased layer cake pans. (9X1 1/2") Bake in a pre-heated 350ºF oven about 40 minutes. Cool 5 minutes. Remove layers from pans and cool on wire rack. Put layers together with Coconut pecan frosting and then frost the top of the cake.

Frosting
Mix yolks, milk, sugar and butter in a saucepan. Cook over medium heat until it thickens, stirring constantly. Remove from heat and add remaining ingredients. Mix well and cool stirring occasionally
