2 cans Black Beans, rinsed and drained well
1 can white corn, drained (I prefer frozen baby white corn)
2 Roma tomatoes, chopped
1 Jalapeno Pepper, seeded, chopped finely (I use 2 or 3 and leave some seeds in for more heat)
1 Red Pepper, chopped
1 tsp Kosher Salt
Freshly ground black pepper
2 ~ 4 Tab chopped Cilantro
2 Avocados, diced

Combine all ingredients except the Avocado. Serve with tortilla chips or Scoops. (I prefer Multi-Grain Scoops) Before serving, add the avocado. Yum!
