20 oz Frozen Cauliflower Florets (about 4 cups)
4 oz Low Fat Cream Cheese (Softened)
1 lb cooked Chicken , Shredded
1/2 cup Salsa Verde or La Victoria Salsa Jalapeno
1 tsp Kosher Salt
1 tsp ground black pepper
1 cup shredded sharp reduced fat cheddar cheese
1/4 cup low-fat plain Greek yogurt
1 Tbsp chopped fresh cilantro (optional)

Pre-heat oven to 375º (optional)
1. Put cauliflower in a microwave safe dish and cook for 10-12 minutes or until fork tender. Add the softened cream cheese and microwave for another 30 seconds. Stir.
2. Add the chicken, salsa verde, salt, pepper, cheddar cheese, greek yogurt, and cilantro. Stir.
3. Bake in a preheated oven at 375º degrees in an ovenproof casserole dish for 20 minutes OR you can microwave on high for 10 minutes.

This is a fabulous Optavia / No Carb dish. It is not spicy, it is creamy and satisfying and packed with vegetables! It even tastes great cold, and re-heats in microwave for yummy lunches!
