Rub:
1 Stick of Butter
2 tbsp Sea Salt
2 tbsp coarse freshly ground pepper
1 tbsp smoked paprika
1 tsp freshly minced Rosemary
1 tsp freshly minced thyme
4 cloves of minced garlic
1 tbsp olive oil

5.5 lb. rib roast

Directions:
Directions:
Bring the Rib roast up to room temperature before cooking (I took mine out about 4 hours prior to roasting). Roast in a preheated 500 degree oven for 5 minutes per pound, then turn the oven off. Do not open the oven door until internal temperature of meat is 125 degrees. Remove from oven and let rest for 10 minutes before carving. Use a probe to monitor the temperature.
