¾ cup shredded low fat sharp cheddar cheese
¾ cup 2% cottage cheese
1 T. Dijon mustard
⅛ t. cayenne
1 (8 oz.) package cream cheese cut into quarters, room temp.
1 (9 oz.) package dry vegetable/recipe soup mix
½ cup chopped fresh parsley

In food processor, pulse cheese, cottage cheese, mustard & cayenne until smooth. Add cream cheese & soup mix and process until smooth. Scrape onto a large piece of plastic wrap. Wrap plastic around cheese mixture & shape into 4 in. ball or 7 in. log. & refrigerate until firm, at least 3 hours or overnight. Just before serving roll onto chopped parsley until coated.
