1 onion, thinly sliced
˝ carrot, thinly sliced
2 garlic cloves, thinly sliced
1 cup dry red wine
˝ t. thyme
1 bay leaf
6 whole black peppercorns

Directions:
Directions:
In medium saucepan speed with oil spray, sauté onion, carrot & garlic until soft, about 5 min. Add wine, thyme & rest of ingredients. Bring to a boil and reduce slightly about 7 - 8 min. Strain, discarding solids. Cool marinade and add meat. Marinate in fridge for several hours or overnight.
