This soup is quick to make because after you brown the meat, onions, and garlic. . . .you just dump in the rest! This is a very nutritious and filling soup. This soup tastes even better the next day when the flavors have time to “marry”.

BROWN:
1 to 1 1/2 pounds ground beef or bison or ground turkey
(OR use shredded leftover roast beef or shredded cooked chicken)

Drain fat after browning meat.

ADD:
Chopped onions and minced garlic (sauteed until tender in oil)

ADD: (dump each can in colander and rinse)
1 (15-oz.) can pinto beans, rinsed
1 (15-oz.) can black beans, rinsed
1 (15-oz.) can garbanzo beans, rinsed
1 (15-oz.) can red kidney beans, rinsed
1 (15-oz.) can whole kernel corn, rinsed

ADD:
2 (15-oz. each) cans diced tomatoes, including all the juices
1 envelope taco seasoning
1 envelope dry Ranch dressing
1 (15-oz.) can beef broth OR chicken broth

Stir and let simmer at least 10 minutes until heated thoroughly. Add a cup of water or more broth if you want a thinner soup.

Offer optional toppings such as grated Cheddar cheese, sour cream, salsa, sliced avocado, chopped cilantro, corn chips.

Great served with cornbread or crusty bread or crackers!

This family-friendly recipe is made with ordinary staples you can stock in your pantry for a fast and delicious and nutritious meal that you can prepare for your family any night of the week. You can even have meat browned and sauteed onions and garlic cooked and in your refrigerator ready to "dump" into the pot.

The optional toppings can allow each individual to have their taco soup the way they like it best.

The smell of this soup simmering on the stove (or on low in your slow cooker) is a welcome invitation for family to come to the table.
