5 lbs. sweet potatoes, peeled and cooked
4 eggs, lightly beaten
1/2 c. orange juice
1/2 c. butter or margarine, softened
1/2 c. sugar
1 t. vanilla
1/2 t. nutmeg
dash salt
miniature marshmallows
Directions:
Directions:
In a large bowl mash sweet potatoes. Add remaining ingredients (except marshmallows). Pour into well-greased 3 qt. baking dish. Bake at 350 for 35-40 minutes or until set. Top with marshmallows and bake until puffed and melted (about 3 minutes).
