1/3 cup Cake Meal
½ cup Potato Starch
1/8 tsp Salt
10 Extra large eggs, separated
1 cup Sugar
Juice of 1 lemon (just under ¼ cup)
Grated rind of 1 navel orange

Directions:
Directions:
Preheat oven to 325 degrees.

Sift the dry ingredients and set aside.

Using an electric mixer, beat the egg yolks until thick. Add ½ cup of the sugar, lemon juice and orange rind. Continue beating until thick and fluffy. Fold in dry ingredients.

In a separate bowl, beat the egg whites and a pinch of salt until foamy. Add the other ½ cup sugar gradually. Beat until peaks form.

Fold egg yolk mixture into egg whites.

Pour into an ungreased 10 inch tube pan. Bake for 45 to 50 minutes. Remove from oven and immediately invert pan for several hours so cake can cool and stretch.
