For 4 Chickens

1 gallon Water
1 cup Salt
½ cup Dextrose
½ cup Ham cure
½ cup Demerara sugar
2 tbsp Maple sugar
1 tbsp Cure

Directions:
Directions:
Combine all ingredients in a stockpot. Bring to a boil. Cool.

Place chickens in a large tub and pour in brine. Add extra water to cover if necessary.

Brine in the refrigerator for 4-5 days.

Remove from brine. Rinse in cold water and towel dry.

Place each bird in sockinettes and hot smoke to 155º.
