1 whole chicken - cut up into pieces
4 tbsp. yogurt
4 sliced onions
1½ tsp. salt
1 tsp. turmeric
1 tsp. coriander and cumin powder
1 tsp. garam masala
1 tsp. paprika powder
3 tbsp. ginger and garlic paste
1 tsp. green chili paste
2 tbsp. lemon juice
1 chopped cilantro
3 tbsp. oil or ghee
10 cashew nuts
1 chopped tomato
2 bay leaves
5 cloves
4 cardamom seeds
1 cinnamon stick

1. Fry the onions in hot oil until they are golden brown and remove them on to a plate. Split the onions into 2 parts.
2. Marinate the chicken with 2 tbsp. yogurt. 2 tbsp. ginger and garlic paste, 1 tsp. salt, 1 tsp. of green chili paste and 1 tbsp. of lemon juice.
3. In a food processor prepare a paste of ½ of fried onions, chopped tomato, 2 tbsp. yogurt, cashew nuts and 1 tbsp. chopped cilantro.
4. In a saucepan. heat the oil left over from the fried onions, add bay leaf, cinnamon stick, cloves and cardamom.
5. Add the garlic and ginger paste, marinated chicken and cook until the chicken changes colour.
6. Next add the spices - paprika, garam masala, turmeric and coriander and cumin powder, 1 tbsp. of cilantro and mix with the chicken.
8 Lower the heat and add the paste of fried onions and cashew nuts, the rest of the fried onions, lemon juice and let it simmer for about 15 minutes for all the spices to come together.
7. Taste the sauce for salt, and spiciness according to your taste. Add more salt or green chili paste if required.
8. Sprinkle cilantro before serving with Rice or Naan.
