For 4 Turkeys

1 gallon Water, then enough extra to cover later
2 cups Ham cure
1 cup Maple sugar
3½ cups Salt
2 cups Dextrose
2 cups Demurara sugar
2 oz Cure No. 1
¼ cup Garlic
Handful of bay leaves & sage
½ cup Peppercorns
2 tbsp Tarragon

Directions:
Bring brine ingredients to a boil then cool.

Remove wing tips, neck, popes nose, and fat from turkeys. Wash well. Place in a large tub. Add brine and water to cover. Keep refrigerated for 5-7 days. Remove from brine and rinse under cold water. Dry and place in sockinettes. Place in smoker at 140º for 2 hours then add smoke (2-3 pans) then raise the temperature to 170º until internal temperature reaches 155º
