8 Boneless/ skinless Chicken breasts or thighs

Salt/ Pepper to taste

1 10 Oz PKG Frozen chopped Spinach, cooked and drained ( can use fresh too)

2 TBLS Butter, melted

3 Oz Cream Cheese- room temperature

1/2 tsp Lemon juice

1/2 C Shredded Swiss cheese

6 TBLS Butter

1/2 C Shredded fresh Parmesan cheese

Preheat oven to 400º

Pound chicken until flattened. Season with salt/ pepper ad set aside.

Mix butter, cream cheese, lemon juice, and spinach.

In center of each chicken spread swiss cheese and 1/4 C spinach mixture. Fold chicken to cover stuffing completely. Place in baking dish seam side down and spread 1 1/2 tsp butter on each. Sprinkle with parmesan, add a small amount of water and remaining butter.

Bake at 400º for 25 minutes or until brown. Serve with Wild or Brown Rice.
