3/4 cup whole dates
1 cup flour
1 tsp baking powder
3/4 tsp cinnamon
1/2 tsp salt
Pinch of nutmeg
3/4 cup canola oil
1/2 cup packed brown sugar
1/4 cup honey
2 large eggs
1 tsp vanilla
1/2 cup chopped walnuts
Non stick cooking spray

Directions:
Directions:
Preheat oven to 325º

Place dates in a bowl and cover with very hot water. Let dates soak while batter being prepared.
In a large mixing bowl sift together flour, baking powder, cinnamon, salt and nutmeg.
In a separate bowl, wish together oil, brown sugar, honey, eggs and vanilla.
Add wet ingredients to dry and stir until a thick batter.
Drain water from dates. Pit the dates, then chop the fruit into small chunks.
Fold walnuts and date into the batter.

Generously grease a loaf pan with cooking spray then pour batter into loaf pan.

Place loaf in preheated oven.
Bake ffor approximately 1 hour, or until an inserted toothpick comes out clean.
Remove from over and set on wire rack to cool.
