3 eggs
2 c. sugar
1 c. oil
2 c. unpeeled grated squash or zucchini
2½ c. flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
2 tsp. vanilla
1c. walnuts

Directions:
Directions:
Beat eggs lightly. Beat in sugar gradually. Then add oil. Mix well. Sift flour together with dry ingredients. Add to egg mixture alternately with squash/zucchini. Stir in vanilla and nuts. Mix well. Turn into 2 greased and lightly floured loaf pans.
Bake on the lowest rack at 350º for 45 minutes.
