Planked Turkey Loaf Recipe

2 lb. ground turkey
2 eggs
1 c. milk
1½ c. bread crumbs
1 tbsp. lemon juice
1 tsp. salt
Instant mashed potatoes (5-6 servings)

Sauce:
1 can cream of chicken soup
⅛ tsp. poultry seasoning
Milk to thin to preference

Directions:
Preheat oven to 350º. Grease bread pan. Beat 2 eggs. Add 1 cup milk. Combine ground turkey, bread crumbs, lemon juice, eggs, and salt. Make into a loaf, place in greased pan. Bake in oven at 350º for 50-60 minutes or until golden brown and firm. Loosen edges of the turkey loaf from pan. Place loaf pan on baking dish.
Prepare instant mashed potatoes according to the package directions. Place potatoes around and on top of the turkey loaf. Bake at 375º until potatoes are brown.
Make sauce by combining cream of chicken soup, poultry seasoning and milk. Heat stirring constantly. Pour over planked turkey loaf as serving.
