Spinach Salad:
2 large bunches or 2 (10 oz.) packages fresh spinach, torn into bite-size pieces
¼ lb. mushrooms, sliced
1 grapefruit or 2 oranges, peeled, cut in quarter-cartwheel slices
1 avocado, sliced
6 slices bacon, cooked and crumbled
2 hard-cooked eggs, sieved and chopped

ZestyLemon Mustard Dressing:
¼ c. vegetable oil
1 egg, slightly beaten,
juice from 1 lemon
2 tbsp. Dijon mustard
1 tbsp. Parmesan cheese
1 tsp. sugar
1 tsp. Worcestershire sauce
1 tsp. salt
1 tsp. pepper

Directions:
Directions:
In a large salad bowl, combine spinach, mushrooms, grapefruit and avocado slices; chill. To serve, pour Zesty Lemon Mustard Dressing over spinach mixture; toss well. Garnish with cooked bacon and sieved eggs. Makes 6 to 8 servings (about 12 cups).
Dressing: In a jar with lid, combine vegetable oil, egg, lemon juice, Dijon mustard, Parmesan cheese, sugar, Worcestershire sauce, salt and pepper; shake well. Chill. Makes ¾ cup dressing.
