1 1/2 cups unbleached flour
1 tbsp olive oil
2 grade A large eggs

Directions:
Directions:
Make a well in the center of the flour and beat in the eggs and oil.
Begin incorporating the flour from the sides.
As soon as the flour becomes stiff, use your hands and knead in more flour.
Work and knead the dough for about 20 minutes until it is smooth, elastic and no longer sticky. Roll through pasta cutting machine or roll thin and cut into thin strips.
