2 tbsp. butter
4 c. (16 oz.) shredded sharp Cheddar cheese
1 tbsp. Worcestershire sauce
½ tsp. dry mustard
Dash Cayenne pepper
2 eggs, slightly beaten
½ c. light cream or half and half
2 English muffins, split, toasted and buttered
4 slices Canadian bacon about ½ inch thick, heated
4 slices tomato, about ½ inch thick

Melt butter in 2 quart heavy saucepan over medium-low heat. Add cheese, stirring constantly until cheese is melted. Stir in Worcestershire , mustard, and Cayenne. Combine eggs and cream. Remove cheese mixture from heat. Stir in egg mixture until well blended. Return to medium heat and cook until thickened stirring constantly. To assemble, place one English muffin half on each serving plate. Top each with a slice of hot Canadian bacon and a slice of tomato. Spoon about ¾ cup rabbit over each. Serve immediately.
