3 pound beef tenderloin
2 1/4 tsp salt
1 tsp pepper
1 TSP BAKING SODA

3 lbs small red potatoes
2 tb olive oil
5 scallions
4 garlic
1 tb smoked paprika
1/2 tsp salt
1/4 tsp pepper

Directions:
Directions:
Season roast on all sides with salt, pepper and baking soda. Tie roast - starting in center. Sit 1 hour at room temperature.

Heat olive oil in pan on top of stove. Add remaining ingredients and roll potatoes around in oil. Turn off heat and add 1/2 C water. Scrape up fon. Bake 425 degrees for 15 minutes to get a head start. (I did 15 min and potatoes were not done at end. My potatoes were quite large though). Turn oven to 300 degrees. Brush on 1 tb olive oil and bake 45-50 minutes. Check center of roast temp for 120-125 degrees. Remove roast to cutting board - Rest roast 15 minutes tented and potatoes should be tented separately also. Cut twine and cut in 1/2 inch slices.
