3 T margarine
2 c cooked acorn squash (about 2 lbs)
1 c sugar
1/2 c flour
2 eggs beaten
Pinch of salt
Pinch of soda
1 c milk
1 tsp vanilla
Cinnamon (sprinkle on top)

Melt margarine in 2 quart casserole dish.

Prepare acorn squash: STOVE - cut squash in half, scoop out seeds, peel, cut pulp into small cubes and parboil until tender.

MICROWAVE: pierce each whole squash with fork several times, cook on high for 15-18 min, rearranging once.cut cooled squash in half, scoop out the seeds, scoop out pulp with spoon

Place cooked squash in bowl; mash to remove lumps. Add remaining ingredients except cinnamon; mix well. Pour into baking dish. Sprinkle with cinnamon.
Bake at 450º for 25-30 mins.

I got this recipe from my friend Ruth Branham in Fort Lewis Washington. Our kids call it squash dessert. Todd added extra eggs and flour the last time we had it and it made it extra fluffy.
