4 large potatoes peeled and cut into 1/4 inch rounds
1 1/2 teaspoons coarse sea salt
8 cups water
1/4 cup good quality olive oil
1/4 teaspoon freshly ground pepper
6 ounces chorizo or Portuguese linguica sausage
1/2 pound kale or cabbage, finely shredded

Directions:
Directions:
Cook potatoes with water and salt until tender. Mash.Stir in olive oil and pepper. Prick sausages with a fork, add them to the pot and simmer 15 minutes. Remove sausages, slice and return to pot. Add kale or cabbage and simmer an additional 3 to 4 minutes. Serve immediately.

I have used Italian sausage, kale or cabbage. It will be slightly different, depending on the sausage and greens used. I like chorizo and kale best, and that is the most authentic. Easy and delicious!
