1 lb peeled, uncooked medium shrimp

1 onion, finely chopped
1 green pepper, finely chopped
2-3 celery ribs, finely chopped
2 Andouille sausages (or Chorizo), diced
6 chicken thighs (boneless; cut in half if large)

Zartarian's Jambalaya Rice w/spices (Family size)
32 oz box beef broth
3 bay leaves

Directions:

1. If frozen, thaw shrimp and refrigerate until jambalaya is cooked.

2. Saute onion, pepper and celery in 2 TBSP EVOO in large fry pan or casserole pan until softened (6-8 minutes).

3. Add chicken and sausage. Cook until chicken is browned on one side, stirring vegetables and sausage occasionally. Turn chicken over so browned side is up.

4. Add rice and broth. Top with bay leaves.

5. Bake, covered, at 325 º for 50 minutes. Do not remove lid or stir.

6. Remove from oven and push shrimp into rice so it will cook. Return to oven and bake, uncovered, 10 more minutes.

Serve with crusty bread and dipping oil and/or salad.
