1/2 cup honey
1/2 onion or shallot
1/2 bag cranberries
1 T constituted orange juice
Cayenne pepper & Thyme
Mandarin oranges

Directions:
Directions:
Combine honey - onion - cranberries - orange juice in a skillet - add a little water - add a dash of cayenne pepper - about 5-6 shakes - add a couple sprigs of fresh thyme - add the mandarin oranges. Cook on medium heat until you hear a few pops from the cranberries breaking.
Cool. Strain and push through... get rid of the thyme sprigs Fry the breasts only about 16-19 minutes
Cook them in clerified butter - (won't burn). Pour the sauce over the breasts when serving. Mom made this at her wild game feast in the fall at the resort.
