5 links or 1lb of turkey sausage
1 medium onion,chopped
1 tsp Ginger/garlic
1/2 tsp salt
1-2 Chillies
2 medium or a cup of crushed canned tomatoes

1 Fry in nonstick pan as per directions
Make chutney

Method:
1 Add onions to pot with 1-2 Tbs vegetable oil
Sauté onions add chillies

2 Add turmeric and allow to sauté for 1-2 minutes. Add 2 tomatoes or cup of crushed tomatoes and garlic /ginger and salt and allow to cook for 4-5 minutes.

3 Add the cooked sausages and allow to simmer for about 5 minutes.

For Shakshuka version :
Use your spatula to make little holes for the eggs, then crack an egg into each hole. I used 6 eggs, though depending on the size of your pan you may use more or less. Reduce the heat to low, cover the pan and cook for another 5-8 minutes or until the eggs are done to your liking.

Before serving, season the eggs with salt and a generous amount of freshly chopped parsley and cilantro. Enjoy!

I favour turkey but this can be done with lamb or beef sausages according to preference.
Also you can turn this dish into Shakshuka by poaching eggs on top of the sausage chutney.
