1 box yellow or lemon cake mix
2 small lemon or vanilla instant pudding mix
3/4 cup cooking oil
4 eggs
10 ounce bottle of Mountain Dew
1 teaspoon lemon extract

Icing:
1 large can crushed pineapple
1 stick real butter
1 cup sugar
2 eggs beaten
1 heaping tablespoon self rising flour
1 cup coconut
Directions:
Directions:
Mix cake ingredients well and bake in 325 degree oven for 35 to 40 minutes. Makes 3 layers.

Mix all ingredients for the icing together except the coconut and cook together until thick. Add the coconut and cool.

Spread the cooled icing over the cooled cake.
