1 lb bag of dried pinto beans
3 # pork roast ( I use pork butt)
7 C water
1 onion diced
4 garlic cloves- minced
salt
chili powder
cumin
oregano
1 small can Ortega diced chilies
corn chips
sour cream
avocado
cheddar cheese
green onion- diced
tomato- diced

Directions:
Directions:
Place the beans in 2 its of water and soak over night

Place soaked beans , roast, onion, garlic, seasonings, chilies in crock pot or heavy duty large pot. Cover and simmer for 5 hours until meat is very tender and falls apart.

Remove meat and tear it apart with a fork. return meat to the pot .

Serve in bowl over corn chips. Have the condiments ready add on top
sour cream
avocado
cheddar cheese
green onion- diced
tomato- diced
