3 eggs
1 1/2 c sugar
1 c vegtable oil
2 tsp vanilla
2 c packed finely chopped unpealed zucchini
3 c all purpose flour
1 tsp each baking powder and baking soda and salt
1 1/2 tsp cinnamon
1/2 tsp nutmeag
1/2 c chopped pecans
1/2 c raisins

Preheat oven to 350º
In your mixer beat eggs, sugar, vanilla and oil.
Peel and grate or food process zucchini into small strips. A spiralizer works great for this.
Add zucchini. Mix dry ingredents, add nuts and raisins. Stir into wet mixture well.
Pour into 2 greased loaf pans. Bake for 50-60 minutes.
Let cool in pan for 10 minutes before turning out onto a wire rack to cool.

Serve this to your kids without telling them what it is. Get their veggies into them.
