3/4 c cornmeal
1 c all purpose flour
1/4 c sugar
1 tbsp baking powder
1/4 tsp salt
1 egg beaten
1 c milk
1/4 c melted butter

Directions:
Directions:
Preheat oven to 425º

Mix all dry ingredients together in a bowl. Beat together egg, milk, butter then add the dry ingredients all at once. Mix just until combined, do not over mix.

Spoon batter into a *Buttered 8-inch pan and spread evenly.

Bake for 20-25 minutes or until lightly browned and firm to the touch.

Can also be separated into 12 muffins, reduce cook time to 15 minutes.
*Buttered - it is important to use butter and not margarine or spray when greasing your pan for this recipe.
